Sentidos do comer entre colhedoras de laranja : um estudo sobre segurança alimentar e trabalho rural

Abstract

A partir de um estudo com colhedoras de laranja e com funcionárias de um restaurante denominado Chalé do Suco, em Conchal – São Paulo, esta dissertação apresenta como vivem as trabalhadoras rurais que passaram pelo processo de migração do campo para a cidade e analisa como o sistema social presente interfere em suas relações cotidianas com alimentos. O estudo foi realizado em 2017 através da observação participante, que permitiu verificar o modo de produção de laranja e as práticas alimentares no cotidiano das famílias das trabalhadoras, desde o preparo da marmita e da comida de casa, junto a entrevistas abertas semiestruturadas e registro fotográfico. O estudo resgata a história de Conchal, colocando a produção de laranja como uma das atividades principais exercidas no município. A discussão teórica ocorre através da alimentação e cultura como abordagem do estudo do rural, e também gênero no rural e no urbano, que permitiu compreender o cotidiano das trabalhadoras, constatando a dinâmica local. O estudo mostrou que a linguagem da comida traz elementos da segurança alimentar e nutricional, com os quais podemos entender dinâmicas existentes entre hierarquia, acesso, e a discussão entre os processos que caracterizam a alimentação cotidiana através da análise dos depoimentos das trabalhadoras rurais. Desta forma, os sentidos de comer entre as trabalhadoras compreendem os sentidos da segurança alimentar e nutricional, mostrando os hábitos alimentares a partir dos modos de comer e dos modos de viver.

From a study with orange harvesters and with employees of a restaurant called Chalé do Suco, in Conchal - São Paulo, this dissertation presents how the rural workers who have gone through the process of migration from the countryside to the city live and analyzes how the present social system interferes in their daily relationships with food. The study was carried out in 2017 through participant observation, which allowed to verify the orange production method and the daily food practices of the workers’ families, from the preparation of the lunchbox to the food to be consumed at home, along with semi structured interviews and photographic records. The study resumes the history of Conchal, placing orange production as one of the main activities carried out in the municipality. The theoretical discussion occurs through food and culture as an approach to study the rural context, and also gender in the rural and urban areas, which allowed to understand the workers’ daily life, stating the local dynamics. The study showed that the food language brings elements of food security, with which we can understand the existing dynamics between hierarchy, access, and the discussion between the processes that characterize the daily diet through the analysis of the statements of the rural workers. In this way, the meanings of eating among the workers understand the meanings of food and nutritional security, showing the eating habits from the ways of eating and the ways of life.
