Filmes biodegradáveis são materiais de baixa espessura produzidos para embalar alimentos. Filmes biodegradáveis são materiais de baixa espessura produzidos para embalar alimentos. Devido a sua composição feita a partir biocompostos, como proteínas, polissacarídeos e lipídios, eles possuem a capacidade de se degradar sob codinções de temperatura e pressão normais, ao contrário da embalagens utilizadas atualmente. Um material que vem sendo estudado e utilizado na composição da matriz polimérica dos filmes é o amido. Para aumentar a vida-de-prateleira dos produtos embalados pelos filmes, adiciona-se compostos ativos com ações antioxidantes e/ou antimicrobianas a fim de evitar a oxidação e a contaminação desses alimentos. Esses compostos podem ser compostos fenólicos, como as antocianinas; carotenóides, como a bixina; ácidos orgânicos, como o ácido ascórbico; nanopartículas de metais, entre outros. Uma atual preocupação do setor alimentício é aumentar a estabilidade desses compostos. Para isso faz-se necessário o uso de materiais de parede, que servem como agentes encapsulantes dos compostos ativos aumentando assim sua estabilidade. Os materiais usados para encapsulação são gomas, polissacarídeos, proteínas, fibras, ácidos organânicos e a mistura destes compostos. Os agentes encapsulantes mais comumente utilizados na encapsulação de compostos bioativos para aplicação em alimentos são goma arábica, amido modificado e amido hidrolisado. As embalagens alimentares destinam-se, principalmente, para proteger e prolongar a vida útil dos alimentos. Dessa forma, é muito importante uma caracterização ampla dos filmes biodegradáveis. Biodegradable films are materials with low thickness produced with pack food. Due to their composition made from bio composites, such as proteins, polysaccharides and lipids, they have the ability to degrade under normal temperature and pressure conditions, unlike currently used packaging. A material that has been studied and used in the composition of the polymeric matrix of the films is the starch. To increase the shelf-life of the products packaged by the films, active compounds with antioxidant and / or antimicrobial effects are added in order to avoid the oxidation and contamination of these foods. These compounds can be phenolic compounds, as anthocyanins; Carotenoids, as bixin; Organic acids, as ascorbic acid; Nanoparticles of metals, among others. An ongoing concern of the food industry is to increase the stability of these compounds. For this it is necessary to use wall materials, which serve as encapsulation agents of the active compounds thus increasing their stability. The materials used for encapsulation are gums, polysaccharides, proteins, fibers, organics acids and the blending of these compounds. Encapsulation agents most commonly used for food application are gum arabic, modified starch and hydrolyzed starch. Food packaging is mainly intended to protect and extend the shelf life of food. Thus, a broad characterization of the biodegradable films is very important.
