Os açúcares estão presentes em praticamente todos os alimentos, podendo ser encontrados na forma de monossacarídeos e polissacarídeos. Os açúcares estão presentes em praticamente todos os alimentos, podendo ser encontrados na forma de monossacarídeos e polissacarídeos. Atualmente existe uma ampla lista de técnicas e métodos oficiais capazes de determinar a concentração de açúcares redutores, açúcares não redutores e açúcares totais em amostras. Estas técnicas baseiam-se nas diferentes propriedades físicas, químicas ou óticas de cada açúcar para fazer a análise quantitativa. O presente trabalho teve como objetivo descrever os métodos comumente utilizados em laboratórios e na indústria e compará-los perante custo, aplicabilidade dos métodos, limites de quantificação, tempo de análise e toxicidade. A necessidade de hidrólise acarreta longo tempo de análise experimental. A cromatografia de alta eficiência (CLAE) mostrou-se a técnica mais completa para o cumprimento do objetivo proposto, apesar do alto custo que está associado a cromatógrafos. O refratômetro manual apresentou-se como a opção mais barata dentre todas as técnicas analisadas, sendo amplamente aplicado a pequenas produções da vitivinicultura. ...
