O setor cervejeiro atualmente movimenta uma cadeia produtiva responsável por 15 % da indústria de transformação no Brasil. A mosturação é a primeira operação unitária da sala de brassagem e tem papel fundamental no perfil sensorial da cerveja. Sendo a mosturação uma etapa com duração significativa, a busca por melhorias de processo que levem a um aumento de produtividade da sala de brassagem é de grande interesse das cervejarias. Nesse contexto, foi realizada uma proposta para melhoria de processo em uma cervejaria do estado do RS, com capacidade de produção de aproximadamente 700.000 hL por mês. Através do acompanhamento da mosturação e dos índices de qualidade, identificou-se pontos que poderiam ser otimizados alterando-se o tempo de repouso e a temperatura da rampa de mosturação. Com isso, foram realizadas quatro variações diferentes da curva de mosturação original. Com estas variações pôde-se observar que o tempo de 24 minutos e a temperatura de 46,5 oC apresentaram os melhores resultados de concentração de aminoácidos livres no mosto (FAN), 207mg.L-1. Para o segundo repouso, o tempo de 11 minutos e temperatura de 62oC foi a melhor condição para a concentração de maltose desejada. O terceiro repouso foi definido em 9 minutos e 72 oC, pois a reação com iodo apresentou coloração dourada ao final do repouso e o grau de sacarificação não superou o limite superior de 0,2 dE. Tendo em vista o tempo total da etapa de mosturação, a nova curva de mosturação proposta teve 26 minutos de duração a menos do que a curva inicial, a qual utilizava o tempo total de 130 minutos. A nova curva não resultou em impactos significativos nos parâmetros de qualidade do mosto e aumentou a produtividade do processo. ...
