dc.description.abstractO excesso de chuvas durante o período de maturação limita a produção e a qualidade das uvas na “Serra Gaúcha”, no Sul do Brasil. Este estudo teve por objetivo avaliar o comportamento fenológico, relações hídricas e trocas gasosas, influências na incidência de doenças fúngicas, crescimento, rendimento e qualidade da uva e do vinho, em função das condições microclimáticas estabelecidas pela cobertura plástica sobre os vinhedos. Sete experimentos foram realizados em Flores da Cunha, RS, Brasil (29°06’S, 51°20’W, 541 m) nos ciclos 2005/06 e 2006/07. Foram utilizadas 12 fileiras de plantas com 35 m de extensão cada uma, sobre as quais foi instalada cobertura plástica impermeável tipo ráfia (160 μm), e em outras cinco fileiras com o mesmo comprimento foram deixadas sem cobertura. Foi utilizado um vinhedo da cultivar Moscato Giallo, de sete anos de idade conduzido em “Y”. A cobertura plástica aumenta a temperatura próximo ao dossel vegetativo, não influencia a umidade relativa do ar, diminui a radiação fotossinteticamente ativa e a velocidade do vento e, restringe a água livre sobre as folhas e cachos. Com o aumento do somatório térmico, as plantas cobertas antecipam o início da brotação e reduzem a duração dos subperíodos fenológicos até a mudança de cor das bagas. Entretanto, a redução da radiação solar, propiciada pela cobertura plástica, atrasa o processo de maturação das uvas. Sendo assim, para utilizar a cobertura plástica é necessário alterar as práticas culturais, como a necessidade de poda verde para reduzir os efeitos da restrição de luminosidade e o atraso na data de colheita, em relação ao cultivo descoberto. Esta tecnologia se apresenta como um atenuante de estresses hídricos, favorecendo a condutância estomática e, conseqüentemente, a assimilação de carbono. As alterações microclimáticas ocasionadas pela cobertura não permitem o estabelecimento do míldio, mesmo havendo maior quantidade de esporangiosporos de Plasmopara viticola, e diminuem a incidência e severidade de podridões de cacho. Por outro lado, o acúmulo residual de fungicidas é maior na área coberta em relação à descoberta. As folhas das plantas cobertas apresentam um incremento na espessura do parênquima paliçádico. O uso da cobertura plástica possibilita um incremento em produtividade. O aumento da temperatura sob cobertura plástica ocasiona a diminuição da concentração de ácido málico nas bagas. Os vinhos oriundos da área coberta são beneficiados tendo uma redução nos níveis de acetato de etila e acidez volátil devido à sanidade das uvas.pt_BR
dc.description.abstractThe excess of rainfall during the grapevines maturation period limits the yield and quality of grapes in the Serra Gaúcha Region, in Southern Brazil. This study evaluated the phenological behavior, water relations and gases exchange, influences on incidence of fungal disease, plant growth, yield and wine quality of grapes when vines are cultivated under plastic covering. Seven experiments were carried out in Flores da Cunha, Rio Grande do Sul state, Brazil (29°06’S, 51°20’W, 541 m), in the 2005/06 and 2006/07 growing seasons. It comprised twelve rows of plants covered with a transparent plastic (raffia type - 160 μm) and five uncovered rows of plants, each row with 35m of length. A seven-year old vineyard of Moscato Giallo conducted in “Y” system was used. The plastic covering increases the air temperature at the leaves level, does not influence the relative humidity of the air, but reduces the photosynthetically active radiation and the wind speed, and restricts the free water drastically on the leaves and clusters. The plastic covering increases the thermal sum and, hence, anticipates the beginning of budburst, so shortening the phenological intervals up to verasion. However, the reduction of solar radiation extends the period of grape maturation under the covering. The covered vineyard needs some green-pruning in order to reduce both the shading into the canopy and the delay of grape maturation. The plastic covering over vineyards reduces the water deficit in plants, so increasing the stomatal conductance and hence the carbon assimilation by leaves. Microclimate alterations promoted by the plastic covering do not permit the incidence of mildium, although there is a large amount of aerial dispersion, and reduced the incidence and severity of grape rot. On the other hand, residual accumulation of fungicides in grapes is higher in the covered vineyard then in the uncovered one. Therefore, the management of diseases in covered grapevines must be change and the use of fungicides must be minimizing, in comparison to the uncovered system. The use of plastic covering permits to increase the grape yield. The reduction of solar radiation increases the thickness of the palisade parenchyma of leaves. Increases in air temperature under the plastic covering decreases malic acid concentration in grapes. The wines produced from the covered vineyard have a better quality than in open sky, since they have a lower ethyl acetate and volatile acidity content, a consequence of the better sanity of the grapes.en
