dc.description.abstractINTRODUÇÃO: É na infância e adolescência que os hábitos alimentares e de atividade física são formados. A promoção da saúde infanto-juvenil no contexto escolar é uma medida estratégica, uma vez que o acesso a essa população se dá em seu ambiente próprio. O papel do educador é fundamental, sendo sua formação condição indispensável para a realização do processo de educação em saúde. OBJETIVO: Este estudo teve como objetivo desenvolver um questionário e avaliar os conhecimentos, atitudes e práticas de alimentação e nutrição de professores do ensino fundamental. METODOLOGIA: Foi elaborado e aplicado questionário estruturado, autoaplicável, dividido por tópicos sobre nutrição e alimentação. Os sujeitos foram professores da pré-escola ao quinto ano do Ensino Fundamental da rede pública municipal de Sapucaia do Sul/RS. RESULTADOS: Participaram da pesquisa 288 (62%) dos professores convidados. Desses, 97% eram do sexo feminino, com idade média de 37 anos, 60% declararam ter filhos e 19% não possuíam graduação. A média de respostas adequadas para "Atitudes" em relação à alimentação na escola foi de 7,2 (72%). A maior parte dos professores (94%) concordou que o ambiente da escola deve promover o consumo de alimentos saudáveis. Todos os professores foram a favor da promoção da alimentação saudável na escola e 80% acreditavam ter as competências necessárias para incluir alimentação e nutrição nos planos de aula. A fonte de informação mais utilizada para foi o livro didático (71 %). Para "Práticas'' em relação à alimentação na escola, a média de respostas adequadas foi de dois pontos (40% das questões). Poucos professores declararam tomar o café da manhã/lanche da tarde (15%) e o almoço (14%) na escola com seus alunos. A média de respostas adequadas/positivas sobre "Percepções de Saúde Pessoal" foi de 2,5 (31 %). 54% estavam satisfeitos com seus hábitos alimentares. Mais de 70% dos professores tiveram consumo inferior ao recomendado para os grupos das frutas, legumes e verduras e leite e derivados. Em "Conhecimentos", os professores acertaram, em média, 41% das questões. 76% dos professores consideraram ter bons conhecimentos sobre alimentação saudável. Entretanto, estes não apresentaram melhor desempenho neste tópico (p=0,215). Do total das 43 questões, o número médio de acertos foi de 20,5. Não foram encontradas associações significativas entre o tempo que o professor lecionava (p=0,453), sua idade (p=0,081), se tinha filhos (p=0,652) ou seu nível de formação (p=0,297) com melhor desempenho geral. Foram estatisticamente significativas as associações entre as respostas mais positivas em "Atitudes", "Práticas" e "Percepções de Saúde Pessoal" e a pontuação em "Conhecimentos" (p<O,OOl). CONCLUSÕES: Embora a maior parte dos professores seja graduada, lecione há mais de 10 anos e considere possuir bons conhecimentos, os resultados da pesquisa demonstraram que os conhecimentos sobre nutrição e alimentação são insuficientes. A maioria dos educadores realiza atividades de educação nutricional baseadas em fontes pouco confiáveis, o que somado ao pouco conhecimento, pode promover conceitos e práticas inadequadas de alimentação entre os alunos. Desta forma, são urgentes as ações que busquem qualificar o professor, de forma que ele desenvolva as ferramentas necessárias para a promoção da alimentação saudável na escola.pt_BR
dc.description.abstractINTRODUCTION: The habits regarding diet and physical activity are formed in the infancy and in the adolescence. The promotion of juvenile health in the school context is a strategic measure, once the access to this population happens in their own environment. The role of the educator is fundamental, being his formation a paramount condition for the realization of the educational process in health. OBJECTIVE: This study aimed at developing a questionnaire and assessing the knowledge, attitudes and practices regarding feeding and nutrition amongst elementary school teachers. METHODOLOGY: A structured questionnaire, self-applicable, was elaborated, divided into topics about nutrition and feeding. The subjects were teachers from pre-school to the 5th grade of the public elementary school in Sapucaia do Sul/RS. RESULTS: The participants in the survey were 288 ( 62%) o f the invited teachers. Out o f these, 97% were females, at an average age of 37, 60% claimed to have children and 19% did not have a degree. The average of adequate answer for "Attitudes" regarding diet in school was 7,2 (72%). Most teachers (94%) agreed that the school environment should promote the consumption of healthy food. All teachers were in favor of the promotion of a healthy diet in school and 80% believed to have the necessary skills to include feeding and nutrition in the lesson plan. The source of information mostly used was the textbook (71% ). As of "Practices" regarding diet in school, the average of adequate answers was two points (40% of the questions). Few teachers claimed to have breakfast/aftemoon snack (15%) and lunch (14%) at the school with their students. The average of adequate/positive answers regarding "Perceptions on Personal Health" was 2,5 (31 %). 54% were happy about their dietary habits. Over 70% of the teachers had an intake of fruit, vegetables and dairy inferior to the recommended. In "Knowledge", the teachers got an average of 41% of the questions right. 76% of the teachers thought they had good knowledge on healthy diet. However, these did not present better performance in this topic (p=0,215). From a total of 43 questions, the average number of correct answers was 20,5. No signi:ficant associations between the amount of time the teacher taught (p=0,453), his age (p=0,081), having children (p=0,652) or his degree levei (p=0,297) with better overall performance were found. The associations between the more positive answers in "Attitudes", "Practices" and "Perceptions on Personal Health" were statistically signi:ficant (p<O,OOl). CONCLUSIONS: Even though most of the teachers have a degree and have been teaching for over 10 years and think they have good knowledge, the results of the survey showed that the knowledge about nutrition and feeding are insufficient. Most educators perform food and nutrition education activities based on unreliable sources, which added to little knowledge, may promote inadequate nutrition concepts and practices among the students. Thus, actions that aim at qualifying the teacher so that he can develop the necessary tools for the promotion of healthy diet in school are urgent.en
