Inserção de alimentos da agricultura familiar nos restaurantes universitários brasileiros : uma revisão narrativa

Abstract

Em meio a um cenário global de obesidade, desnutrição e mudanças climáticas, a agricultura familiar surge como uma oportunidade de valorização de um sistema alimentar sustentável e que promove a garantia de uma alimentação saudável e adequada. Nesse contexto, os restaurantes universitários demonstram ser locais com potencial de inserção de alimentos provenientes da agricultura familiar, devido ao seu grande volume de refeições produzidas diariamente, afetando uma parcela significativa da população. Assim, o objetivo do estudo é compreender como ocorre a inserção desses alimentos no contexto universitário, além dos possíveis entraves e impactos que esse processo pode causar. Nesse sentido, realizou-se uma revisão narrativa da literatura, a partir de uma pesquisa nas principais bases de dados, sendo incluídos um total de 12 artigos para a discussão. A partir da leitura integral dos artigos foram elaborados três eixos temáticos que orientaram a estrutura da discussão: a implementação da agricultura familiar nos restaurantes universitários, os principais desafios encontrados e os impactos decorrentes dessa prática. Os resultados demonstram que a compra de alimentos da agricultura familiar ocorre principalmente através de políticas públicas, como o Programa de Aquisição de Alimentos, contribuindo para a garantia da segurança alimentar e nutricional, fomentando a economia local e gerando sistemas alimentares sustentáveis. Entretanto, existem entraves significativos que podem inviabilizar o processo, relacionados à logística e a processos burocráticos e estruturais. Sugere-se que novos estudos sejam realizados, a fim de fomentar a discussão do tema e identificar estratégias capazes de solucionar os entraves encontrados para a implementação desses alimentos nos restaurantes universitários.

In a global scenario of obesity, malnutrition and climate change, family farming emerges as an opportunity to promote a sustainable food system that promotes the guarantee of healthy and adequate nutrition. In this context, university restaurants have proven to be places with potential for the inclusion of food from family farming, due to the large volume of meals produced daily, affecting a significant portion of the population. Thus, the objective of the study is to understand how the inclusion of these foods occurs in the university context, in addition to the possible obstacles and impacts that this process can cause. In this sense, a narrative review of the literature was carried out, based on a search in the main databases, and a total of 12 articles were included for discussion. Based on the full reading of the articles, three thematic axes were developed that guided the structure of the discussion: the implementation of family farming in university restaurants, the main challenges encountered and the impacts resulting from this practice. The results show that the purchase of food from family farms occurs mainly through public policies, such as the Food Acquisition Program, contributing to ensuring food and nutritional security, fostering the local economy and generating sustainable food systems. However, there are significant obstacles that can make the process unfeasible, related to logistics and bureaucratic and structural processes. It is suggested that new studies be carried out in order to encourage discussion of the topic and identify strategies capable of overcoming the obstacles encountered in the implementation of these foods in university restaurants.
