O consumidor brasileiro mostra-se cada vez mais consciente em relação aos alimentos que inclui em sua dieta. A busca por alimentos saudáveis e livres de contaminantes tornou-se maior, resultando no crescimento da demanda por produtos orgânicos. Ainda recente no país, o mercado de orgânicos desenvolve-se, tanto em relação aos produtos ofertados, como em relação aos canais de venda disponíveis. O objetivo deste trabalho foi caracterizar o mercado brasileiro de alimentos orgânicos processados a partir de informações sobre as razões de consumo e as características da oferta e demanda, obtidas por meio de levantamento de dados exploratórios de artigos científicos, pesquisas de consumo e informações das empresas ofertantes de orgânicos processados. Além disso, com a finalidade de comparação, foram obtidos dados referentes à oferta atual de alimentos processados orgânicos nos Estados Unidos. Verificou-se que o consumo de produtos orgânicos está vinculado à consciência ambiental e à busca de benefícios pessoais em relação à saúde. Os canais de venda disponíveis para o consumidor são diversificados, sendo possível encontra-los no grande ou pequeno varejo, além das opções de venda direta. Percebe-se preferência pelo mercado direto, pelo qual é possível uma relação de garantia e vínculo com o produtor. Após comparação com o mercado estadunidense, notou-se que os produtos processados orgânicos brasileiros apresentam pequeno grau de diferenciação e variedade reduzida. Conclui-se que o país segue a tendência global de valorização do consumo de produtos locais, através do consumo consciente e da preferência pelos canais de distribuição de cadeia curta. Além disso, constata-se a necessidade de maior desenvolvimento da oferta de produtos orgânicos processados, para que o consumidor encontre maior variedade dentre os produtos da categoria e possa optar por produtos orgânicos em todas as refeições. ...

The brazilian consumers are becoming more aware of the food products they are including in their diet. The search for healthy and contaminant-free food has become larger, resulting in increased demand for organic products. Still very recent in the country, the organic market develops, both in relation to the products offered, and in relation to the sales channels available. The objective of this work was to characterize the Brazilian organic food market, based on information on the consumption ratios and the characteristics of the supply and demand, obtained through the exploratory data collection of scientific articles, consumer surveys and information from the suppliers of processed organics. In addition, for the purpose of comparison, data were obtained regarding the current supply of organic processed foods in the United States. It was found that the consumption of organic products is linked to environmental awareness and the search for personal benefits in relation to health. The available sales channels are diversified, being possible to find them in large or small retail, in addition to the direct selling options. It is perceived preference for the direct market, by which a relationship of guarantee and bond with the producer is possible. After comparison with the US market, it was noticed that the brazilian organic processed products have a small degree of differentiation and reduced variety. It is concluded that the country follows the global trend of appreciation of the consumption of local products, through the conscious consumption and the preference for the channels of distribution of short chain. In addition, there is a need to further develop the supply of processed organic products, so that the consumer finds a greater variety among the products of the category and can opt for organic products at all meals. ...
