O processo de cicatrização de lesões de pele é influenciado por diversos fatores que interferem na sua evolução, entre eles uma alimentação equilibrada, constituída de diferentes nutrientes, onde a presença do mineral zinco, um micronutriente essencial ao organismo, é fundamental, uma vez que atua como um estabilizador das membranas celulares e como cofator essencial a vários processos. O zinco é essencial nas fases proliferativa e de remodelamento, participando na síntese proteica, na imunidade, na formação do colágeno e na manutenção da estrutura celular; estimulando a mitose celular e a proliferação dos fibroblastos. Neste contexto procurou-se conhecer o consumo de alimentos fontes de zinco por portadores de feridas atendidos nas quatro ESFs, do município de Tapes, RS. Para tanto foi proposto um estudo transversal, com usuários adultos, de ambos os sexos, que responderam a 2 questionários; um de frequência de consumo alimentos fontes do mineral zinco e outro com questões abertas e fechadas, para identificação de dados sócio- demográficos e clínicos. Vinte e dois indivíduos participaram da pesquisa, sendo 7 mulheres e 14 homens, com idade média de 70 anos variando de 53 a 86 anos. O consumo de carne vermelha foi diário para 38% dos participantes e de frango para 41%. O leite foi habitual para cerca de 25% .O consumo foi considerado frequente, de 1 a 7 vezes por semana, para feijão (54%), ovo (49%), peixe (9%). A sardinha, ervilha, macarrão integral, aveia, lentilha, fígado, amendoim, foi de consumo eventual para a maioria e os alimentos nunca consumidos foram gérmen de trigo, amêndoas, nozes, arroz integral, camarão. O tamanho das porções consumidas foram predominantemente pequenas e a freqüência de apenas uma vez ao dia, evidenciando o baixo consumo do mineral zinco pela população estudada. ...

Consumption was considered frequent, from 1 to 7 times a week, for beans (54%), egg (49%), fish (9%). The sardines, peas, noodles, oats, lentils, liver, peanuts, were eventually consumed for most and the foods never consumed were wheat germ, almonds, walnuts, brown rice, shrimp.
